I’ve been mulling over this recipe for quite some time now and I’m so excited to share it! Apple pie is one of the most comforting, tasty and traditional desserts that everyone enjoys. What’s so wonderful about this recipe is the wholesome ingredients that are packed with wonderful health benefits. Now, it would be a stretch for me to claim that this recipe is super healthy because if I do then it might give you the excuse to eat the entire pie, but, I must say the ingredients used in this pie are a wonderful alternative to that traditional apple pie loaded with lots of butter and flour.

- 1 cup coconut flour
- 1 cup almond meal/flour
- 2/3 cup coconut oil (melted)
- 1 cup apple sauce
- 1 Tbs. baking powder
- 2 eggs
- 10 pitted dates (pulverized into small bits in a blender or food processor)
- 2 Tbs. coconut flakes
- 1 Tbs. vanilla extract
- 1/2 cup almond milk
- 2 Apples
- 1 cup raisins
- 1/2 cup of coarsely chopped pecans
- 1 Tbs. cinnamon
- 3 Tbs. pure maple syrup
Begin by gathering all your ingredients and measuring everything out, this will make the process of putting together the pie much simpler.
We will start with the crust: Mix coconut flour, almond flour, 2/3 cup coconut oil, 1 cup apple sauce, 1tbs baking powder, 2 eggs, dates, coconut flakes, 1 tbs. vanilla extract in a large bowl. Once all the ingredients are mixed and the dough is starting to form you’ll want to add the almond milk in small increments and stir in to soften.
After the dough is mixed, grease the bottom of a pie dish with coconut oil and begin to press just about 1/2 of the mixture into the pan, making sure the dough is evenly spread and not to thick. Just make sure that you have enough dough leftover for the top the pie.
Then, bake the crust for 20 min on 350 degrees until the edges begin to brown and the dough partially cooks through. Remember, you’re going to cook the pie again once you add in the apples and the top crust so you don’t want to overcook it now.
In the meantime begin to make the pie filling. Place the sliced apples, raisins, pecans, cinnamon and maple syrup in a large bowl and stir until the apples are completely coated with the mixture.
After the crust is done and the apple mixture is mixed place the pie filling in the cooked crust and spread evenly. Now, it’s time to add the rest of the dough to top the pie. Break the dough up into smaller chunks and place them evenly on top of the apples spreading it with your hands, this can be a little tricky with the sticky texture of the dough. It’s okay if some apple pokes through the top.
After the pie is completely assembled place it back in the oven and allow to cook for about 45 min. checking it after 30 min. to make sure it’s not browning too quickly. Once finished, check with a knife to make sure that it’s cooked through and remove from oven. Allow to cool for about one hour, serve and enjoy!
- Tip! : Serve hot with a dollop of whipped cream or ice-cream!
